This specification applies to ham packaged and cooked in hermetically sealed containers. The ham shall be either commercially sterile or pasteurized. This specification is intended to be used by food services in the procurement of food.The testing and evaluation of a product against this specification may require the use of materials and/or equipment that could be hazardous. This document does not purport to address all the safety aspects associated with its use.
