This specification applies to ice cream and ice milk made from milk products and to sherbet made from fruit juice or fruit and milk products. It is intended to be used by food services in the procurement of food.The test methods referred to in this specification may require the use of materials and/or equipment that could be hazardous. This document does not purport to address all the safety aspects associated with its use. Anyone using this specification has the responsibility to consult the appropriate authorities and to establish appropriate health and safety practices in conjunction with any existing applicable regulatory requirements prior to its use.
